A Family History
Our story begins seventy years ago, when my father, Gemore Galloni, began producing Parma Ham as head salter, employed by a well-known ham factory.
Then, in 1960, he established his first factory here in Langhirano. From him we learned all the secrets of traditional processing.
The one that is based on knowing how to choose the best fresh legs, on care and manual skill in processing, and on the use of natural air throughout the seasons.
Today, my children Marco and Francesca and I have founded our new company with the aim of enhancing the artisanal heritage linked to the best tradition of Parma Ham and offering on the market a production of excellence that is clearly distinguished from more markedly industrial products.
